We currently produce three bottlings: rosé, white, and dry.

Capitoline Rosé Vermouth

Tasting notes: Seville orange, lemon, nutmeg, clove, quinine, fresh herbs.

Base wine: Rosé of California whole cluster carbonic Sangiovese.

Fortified with local grain spirit infused with 13 botanicals and spices.

We like: Capitoline Rosé and soda; Adonis; 1:1 Manhattan; Negroni

Capitoline White Vermouth

Tasting notes: Meyer lemon, saffron, fresh mint, cinnamon, honey, quinine.

Base wine: Aromatic and dry stainless steel fermented, blended white wine.

Fortified with local grain spirit infused with 14 botanicals and spices.

We like: Capitoline White + Tonic; White Negroni; 2:1 Martini

Capitoline Dry Vermouth

Tasting notes: Gentian, artichoke, citrus, rhubarb root, quinine, ginger.

Base wine: Aromatic and dry stainless steel fermented, blended white wine.

Fortified with local grain spirit infused with 15 botanicals and spices.

We like: Corpse Reviver; Brooklyn; Perfect Rob Roy; 1:1 Martini
